People! What is better than celebrating Cinco de Mayo? Margs, guac, tacos and all things Mexican. I love it all! I grew up without Mexican food or culture in my life. Seriously! I don’t think I ate anything Mexican until I was in my twenties. And now that I live in the Mile High city there is great Mexican food with in a 5 minute drive. And you are when you are a two hour flight from south the border, Mexico trumps Florida any time. Here are the top Cinco things you need to be doing this Cinco de Mayo.
Make a Marg. Please don’t by a bottle of that “pre-made” crap. Make a real margarita and save yourself the huge amount of sugar and a huge hangover. The real deal never gives me a hangover.
Kosher salt or ground sea salt ( for the rim)
2 ounces (1/4 cup) tequila
1 1/2 ounces (3 tablespoons) fresh lime juice
1 ounce (2 tablespoons) fresh orange juice
1 teaspoon light agave nectar
1 lime wedge or round, for garnish
Add ll the ingredients to a shaker and shake shake shake!
Well if you are filling up on alcohol you going to have to have something to soak it up! I know you all have been to Whole Foods and I know you will risk a communicable disease if they are sampling the guacamole in the produce section. Yes because it is that good. I love that stuff! Although I do like to make my own it’s always worth the $20 when you are in a hurry to pick up their guacamole and those home made chips. Mmmmmm.
4 ripe avocadoes
1/4 cup thinly sliced grape or cherry tomatoes (or mangoes if you’re feeling adventurous)
1 tablespoon finely chopped red onion
1 jalapeño or serrano pepper, seeds removed and finely chopped
Coarsely chopped cilantro, to taste (I like about a teaspoon and a half)
2 cloves garlic, finely chopped
Juice of one half lime- I grill it in a skillet (it enhances the flavor and warm limes produce more juice- it also smells heavenly)
1/2 teaspoon each cumin and chili powder (or to taste)
Salt and pepper, to taste
Combine all the ingredients except the avocadoes, salt and pepper to give the flavors a chance to meld for a half hour or so. Mash the avocadoes with a fork so there are whole pieces of avocado and then gently fold in the other ingredients. Serve immediately.

Back to booze. I was just recently introduced to this delicious cocktail last time I was in Mexico and its now one of my favorite was to drink beer, with a little spice!
2 teaspoons honey, spread into a thin layer on a plate
1/4 cup kosher salt
1/2 teaspoon smoked paprika
1/8 teaspoon cayenne pepper (optional)
2 limes, juiced (plus extra lime wedges to garnish)
2 cups light Mexican beer
2 1/2 teaspoons Worcestershire sauce
2 teaspoons hot sauce (preferably a more vinegar based hot sauce such as Tabasco)
1 teaspoon low sodium soy sauce
1/2 jalapeno, seeded and diced (optional)
freshly cracked black pepper
1. Dip the rims of two glasses into the honey. (you want only a very thin layer)
2. Place salt, paprika and cayenne (if using) onto a plate and stir together with a fork until combined. Finish rimming glasses with salt mixture, fill with ice and set aside.
3. Fill a large shaker partially with ice followed by the remaining ingredients, except for the jalapeno. Close and shake until well mixed. Divide mixture among the two prepared glasses and finish with lime wedges, black pepper and jalpaenos (if using). Serve.
